Golden Beets, Red Lettuce & Goat Cheese Grilled to Perfection

Golden Grilled Cheese

I admit that I was drawn to this recipe from BS’ In the Kitchen because the photo of her grilled red beets and arugla looked so pretty.

(Food photography is killing my waistline.)

As for the flavor, I was a bit doubtful. Not anymore. The creaminess of the goat cheese, slight bitterness of the lettuce and sweet earthiness of the beets makes one fantastic grilled cheese sandwich.

Here’s my variation of BS’ recipe…

Golden Beets, Red Lettuce & Goat Cheese Grilled Cheese

Golden beet, roasted, skins and and sliced into rounds (can be roasted a day or two in advance)
Red lettuce leaves, rinsed and patted dry
Plain goat cheese
Sourdough bread slices
Splash of red wine vinegar
1 Tbsp olive oil

Saute roasted beet slices in olive oil, finish with a splash of red wine vinegar and cook a minute longer until liquid evaporates, then set aside. Saute red lettuce leaves only until warmed and wilted. Then build sandwich: goat cheese beets, a bit more goat cheese, lettuce and top half of bread. Cook on medium heat until the buttered bread is golden and goat cheese has melted. Cut in half, admire your pretty grilled cheese sandwich, then enjoy!
